Beattie’s Yellow Corn Meal

Batter Bread

2 cups boiling water
2 eggs
1 teaspoon baking powder
1 ½ cups Beattie’s Yellow Corn Meal
1 cup buttermilk
1 teaspoon salt

Preheat oven to 450 degrees. In a bowl, beat eggs. Add buttermilk. Add in dry ingredients, mixed and sifted together. Mix all ingredients well, add boiling water. Pour batter into well-greased 7” Pyrex dish. Bake 20-25 minutes.

Corn Sticks and Corn Meal Muffins

1 cup Beattie’s Yellow Corn Meal
2 teaspoons baking powder
¾ teaspoon salt
1 egg
1 cup buttermilk

Preheat oven to 475 degrees. In a bowl, beat egg and milk. Add in dry ingredients, mixed and sifted together. Beat well. Pour into hot greased muffin pan or corn stick irons. Bake for 20 minutes. Makes 14 corn sticks.

Hush Puppies

2 ½ cups Beattie’s Yellow Corn Meal
2 tablespoons flour
1 ½ teaspoons baking powder
1 ½ teaspoons salt
3 eggs
1 ½ cups sweet or buttermilk
1 small onion (chopped fine)
1 teaspoon melted shortening

In a bowl, beat eggs. Add buttermilk or sweet milk. Add in dry ingredients, mixed and sifted together. Fold in chopped onion and melted shortening. Drop from spoon into hot deep fat and fry to a golden brown.

Spoon Bread

1 cup Beattie’s Yellow Corn Meal
1 ½ teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup buttermilk
2 cups boiling water

Preheat oven to 500 degrees. In a bowl, beat egg then add buttermilk. Add in dry ingredients, mixed and sifted together. Beat well. Pour boilng water over this and mix. Pour into hot greased dish. Bake for 20 to 25 minutes.
