Cross Self-Rising White Corn Meal

Hush Puppies

2 ½ cups Cross Self-Rising Corn Meal Mix
3 eggs
2 tablespoons flour
1 ½ cups sweet milk or buttermilk
1 small onion (finely chopped)
1 teaspoon melted shortening

In a bowl, beat eggs. Add in milk, shortening, flour, onion and corn meal mix. Drop by spoonful into deep fat that has been preheated. Fry to golden brown.

Southern Spoon Bread

¾ cup Cross Self-Rising Corn Meal Mix
1 teaspoon baking powder
1 teaspoon salt
1 ½ cups cold water
2 eggs (separated)
¼ cup bacon drippings or melted butter

Preheat oven to 400 degrees. In a bowl, combine the corn meal, baking powder and salt. Then sprinkle this by hand into the cold water, stirring until smooth. Stir egg yolks in to mixture, then add melted fat. Fold in the well-beaten egg whites. Pour into a well-greased baking dish and cook for 35-40 minutes.

Corn Sticks and Corn Meal Muffins

1 cup Cross Self-Rising Corn Meal Mix
1 egg
1 cup sweet milk or buttermilk

Preheat oven to 475 degrees. In a bowl, beat egg. Add in milk and corn meal and stir until smooth. Pour into very hot, well-greased corn stick irons or muffin pans. Bake 15-20 minutes or until browned.

Batter Bread

2 eggs
1 cup buttermilk
1 tablespoon lard
2 cups cold water
1 ½ cup Cross Self-Rising Corn Meal Mix

Preheat oven to 450 degrees. Put pan in oven with 1 tablespoon of shortening and let melt. In a bowl, beat eggs, add milk, then 1 ½ cups Cross’ self-rising corn meal mix. Mix thoroughly. Add 2 cups of cold water. Mix well and pour into hot greased pan. Cook for 20 minutes or until golden brown.
